On Saturday Mum and I went to the market, we saw a bowl of plums for £1 – why would you not buy them?! We decided in that moment that plum crumble with custard would be the perfect end to a very chilled out day. We were right, it was simple to make and delicious to eat! I think crumbles are my ‘go to’ dessert from now on.
Ingredients:
12 plums – quartered
100ml of cold water
2 tbsn of sugar
1.5 teaspoons of ground ginger
For the crumble:
6oz/170g of plain flour
3oz/85g of cold butter
1.5oz/40g of sugar
0.5 teaspoon of ground ginger
2 tablespoons of muesli (optional)
Method:
1) Firstly you need to prepare the plums. Cut eat plum in to quarters and remove the stone
2) Place the plums in to a saucepan with the water and gently heat until the plums are slightly softened – about 10 minutes
3) Once they’re ready, turn off the heat. Stir in the sugar and ground ginger
Method: Crumble
1) Place the flour and butter in to a bowl – using your fingertips, rub together until the mixture resembles breadcrumbs
2) Stir in the sugar, ginger and muesli
To Assemble:
1) Pre-heat the oven 180°C/Gas 4
2) Pour the prepared plums in to an oven-proof dish (if you feel like there’s too much juice, just spoon a little out)
3) Sprinkle the crumble mixture over the plums until evenly covered
4) Bake in a pre-heated oven for 30-35 minutes until golden brown and you’ll probably see the plum juice bubbling over the sides!

♥ If you remove any of the plum juice, save it, it’ll be scrummy over ice-cream!
