
I got this recipe from an extremely wonderful friend and I’ve used it every time I’ve made pancakes since, it works a treat and the results are soooo ridiculously yummy. I know most of the time when pancakes are made the first one always goes wrong – it’s a fact – but I made pancakes this morning and they were all perfect, for a change!
You can also make the pancake batter ahead of time ( probably no longer than a day) and keep it in the fridge until you’re ready.
Ingredients:
2 cups/11oz of plain flour
2 teaspoons of baking powder
12 teaspoons/4oz of sugar
2 eggs
2 teaspoons of sunflower/vegetable oil
A pinch of salt
A little milk
Method:
1) Mix the dry ingredients first – flour, baking powder, sugar and salt.
2) Then add the oil, eggs and milk – you can add as much milk as you like until the mix is the consistency you’re happy with.
3) Heat a little oil in a frying pan before pouring in a little of the pancake mix. Keep an eye on each pancake and adjust the heat if your pancakes are burning or not cooking enough.
4) Blueberry pancakes are also amazing so if you’re feeling in a blueberry mood, add a small amount to all or a few of the pancakes. ( I normally do between 6-8 blueberries depending on the size of the pancake).
4) If you’re sharing ( this is recommended otherwise you’re probably going to burst…) put a plate in the oven on a low temperature to keep the pancakes warm before serving.

•Cinnamon
•Sugar
•Chocolate Sauce
•Butter
•Maple syrup/Golden syrup
•Banana
