
Ingredients – for the pastry:
350g of self-raising flour
145g of lard
60g of butter
3/4 – 1 teacup of water
Method:
1) Put the flour in to a bowl, add the lard and the butter and using your fingertips, rub together until the mix resembles breadcrumbs.
2) Add a little water at a time whilst mixing with a knife until it comes together in a dough.
3) Chill for at least 15 minutes.
Ingredients – for the filling:
500g golden syrup
200g breadcrumbs ( white or brown bread)
Zest and juice of 1 lemon
4 tablespoons of double cream
Method: Preheat the oven to 180°C/Fan 170°C/Gas 4
1) Once the pastry has chilled, roll out to fit a pie dish that measures 26cm in diameter, prick the base all over with a fork.
2) Cover with foil and baking beans and bake for 10 minutes and then take the foil and baking beans off and put back in the oven for a further 5 minutes.
3) Mix all the filling ingredients together and spoon in to the pastry case. Bake for 20 – 25 minutes.
4) Leave to cool slightly. Best served with cream – clotted, whipped, double, ice cream.. a bit of each!
