
It’s the end of October already and I’m aware apple season is coming to an end so I may be a little bit late with my apple recipe but it’s one of the best, warming and delicious desserts for Autumn/Winter so I’m going to blog it anyway! Custard is probably the greatest company for apple strudel (ice-cream as well if you’re anything like me!) I hope you find it as scrummy as I do!
Ingredients:
320g pack of puff pastry – rolled to approx 35×30
2-3 apples – peeled, cored and sliced in to half moons
Juice of 1 lemon
1 teaspoon of mixed spice
1 1/2 teaspoons of cinnamon
2 good sized tablespoons of brown sugar
50g of sultanas
Method:
• Pre-heat the oven to 200°C/Fan 180°C/Gas 6
1) Roll the pastry out and place on a baking tray lined with baking paper
2) Prepare the apples, place them in to a bowl with the lemon juice. Add the spices and the sugar, mix it all together until the apples are coated evenly. Add the sultanas and mix again
3) Spoon the apple mixture down the centre of the pastry – you may not need all of the apple but be generous!
4) Cut strips 10-12cm long and about 1.5cm wide on a slight diagonal on both sides of the mixture and then take one from each side and fold one over the other in a plait style all the way down
5) Brush the pastry with either an egg or milk wash and then sprinkle with granulated sugar
6) Bake in the oven for about 30 minutes until golden brown
7) Serve warm with custard or ice-cream or cream or all three…
TIP: If you have any apple mixture left over, add a splash of water and pop it in the microwave for a couple of minutes until soft. It makes a great topping for plain/vanilla yogurt. It’ll keep well in the fridge for a couple of days.
