This is a fab recipe for using up bananas that have seen better days (They don’t have to be passed their best for you to try this recipe). My Mum has been making this banana loaf since I can remember, it’s definitely a family favourite… with a little butter!
It also freezes well, so if you make it but decide you want to freeze it for another time, or freeze half then you can – make sure you wrap it well in foil.

The Ingredients:
♦ 8oz/225g plain flour
♦ 1 teaspoon bicarb of soda
♦ 1/2 teaspoon cream of tartar
♦ 4oz/100g butter
♦ 6oz/175g sugar
♦ 3 tablespoons of milk
♦ 2 bananas – mashed
♦ 2 eggs – lightly beaten
♦ Sugar to finish

♦ If you want to add a little twist you could add 4oz/100g of chocolate chips

Method:
♦ Preheat the oven to 180°C/350°F/Gas 4
♦ Grease and line and 2lb loaf tin
1) Sift the flour, bicarb of soda and cream of tartar into a mixing bowl. Add the butter to the flour and using your fingertips, rub the butter in to the flour until the mix resembles breadcrumbs
2) Mix in the sugar
3) In a small bowl mash the banana then add the milk and beaten eggs. Stir to combine
4) Make a well in the flour and mix in the banana mixture thoroughly
5) Pour in to your prepared loaf tin – level the top then sprinkle a good amount of sugar over the top. Bake for 1hr to 1 1/4hrs.
6) Leave to cool before removing the loaf from the tin
