I always thought biscotti was really tricky to make – maybe because the name makes it sound complicated somehow but it’s not tricky. It’s the perfect accompaniment to a cup of tea as it is definitely the type of biscuit that – in my opinion – needs to be dunked!

The recipe:
2 eggs
100g sugar
250g of plain flour
3/4 tsp of bicarbonate of soda
100g of dark chocolate – chopped
8-10 dried apricots – chopped
1 tsp on mixed spice

Method:
♥ Pre-heat the oven to 180°/Gas 4
♥ Line a baking tray with baking paper
1) Put the eggs and sugar in to a mixing bowl and whisk until light
2) Sift it the flour, bicarb and mixed spice – fold gently
3) Now add the chocolate and apricots
4) Mix to thoroughly combine until you have a soft dough
5) Tip on to a lightly floured surface and shape in to a 25-30cm sausage shape and flatten slightly – I did mine to 3cm thick but if you’d like more, thinner biscotti then flatten more.
6) Place on the baking paper and bake for 30 minutes.
7) After 30 minutes, reduce the oven to 160°C/Gas 3. Remove the biscotti from the oven and cut in to slices roughly 1cm thick. Lay the slices on their sides and return to the oven for a further 10 minutes.
