I love a bowl of yogurt, fruit and granola for my breakfast – especially over the Summer, it’s definitely one of my favourites so  I thought I’d try make my own granola and I am really  happy with the result. The oats mixed with seeds and fruit with a subtle honey flavour is perfection.
The recipe is below. It’s simple, I promise.
You could also use this granola in a crumble mixture or for an ice-cream topping.

Ingredients:
• 300g oats
• 3 table spoons of honey
• 2 table spoons of veg oil
• 55g pumpkin seeds
• 25g flaked almonds
• 55g desiccated coconut
• 60g of dried apricots – chopped

Method:
• Pre-heat the oven to 150°C/Gas 2
1) Combine the oil and the honey in a large mixing bowl
2) Then add the oats, pumpkin seeds and flaked almonds – mix well
3) Tip the granola onto two baking trays, spread it out to create even layers
4) Bake for 15 minutes
5) Remove from oven to stir in the coconut and apricots – I found a wooden spoon works for this. Return to the oven for a further 10-12 minutes until golden
6)Leave to cool
