Finally a recipe for July. Just. I love blueberries and I love muffins so what could be better than blueberry muffins? These ones have a hint of lime and the sweetness of white chocolate which makes them even better.

Ingredients:
• 2 eggs
• 200g of sugar
• 225ml of milk
• 125ml of veg oil
• Zest and juice of 1 lime
• 200g of blueberries
• 400g of self-raising flour
• 1/2 teaspoon of baking powder
• 75g of white chocolate to drizzle
Method:
• Preheat the oven to 180°C/Gas 4
• Line a muffin tray with cases – makes about 18
1) Crack the eggs in to a bowl and whisk. Then add the sugar, milk and oil and whisk again.
2) Add the lime zest and juice and the blueberries
3) Sieve in the flour and the baking powder – fold in gently with a wooden spoon.
4) Put spoonfuls of the mixture in to prepared muffin cases and bake for 20-30 minutes until golden.
5) Once cool, melt the chocolate over a pan of gently simmering water or in the microwave then drizzle over each muffin and leave to set. YUM.
