I just love it when a cake turns out amazing the first time you make it. What a reward. Baking this cake was one of those occasions and it would be a shame not to share the recipe. I’ve made it twice in a week! When my Mum first tried it she said “You’ve got to make that again!”
So here’s the recipe:

Ingredients:
• 155g of butter
• 155g of sugar
• 2 eggs
• The zest of 2 large oranges (or 3 small ones)
• 75ml of milk
• A dash of almond extract (optional, the cake will be yummy either way!)
• 100g of white chocolate – chopped in to chunks
• 30g of ground almonds
• 225g of plain flour
• 2 level teaspoons of baking powder

For the drizzle:
• The juice of half an orange
• 3-4 tablespoons of icing sugar

To finish:
• 70g of white chocolate

Method:
• Preheat the oven to 180°C/Gas mark 4
• Grease and line a loaf tin
1) Cream the butter and sugar together until light and creamy
2) Beat the eggs in one at a time – mix well
3) Add the orange zest, milk and the almond extract (if using) – mix
4) Now add the chopped chocolate and the ground almonds
5) Sieve in the flour and the baking powder. Stir in gently until thoroughly mixed
6) Spoon in to your prepared loaf tin – level it out. Bake in the oven for 50 – 60 minutes, until a skewer/cocktail stick comes out clean (there may be a few crumbs – that’s okay)
7) When your cake is in the oven, make the drizzle by squeezing the orange juice in to a bowl and adding a little icing sugar at a time until you have a consistency you’re happy with. Stir well.
8) Once you’re cake is out the oven, using your skewer/cocktail stick make little holes all over the top of your cake and spoon the drizzle over.
9) Then when the cake is cold, melt your 70g of white chocolate either in a bowl over gently simmering water or in the microwave. Using a spoon/piping bag drizzle the chocolate over the top of the cake.

I also give you full permission to lick out the bowl! Enjoy – it’s winner, especially with a good cuppa tea!
