So when you start work at 7am and you really haven’t got the energy to make a breakfast before you go then these are the perfect solution! They’re full of goodness, they taste yummy and they’re super simple to make.
Here’s the recipe friends:
Ingredients:
1 can of condensed milk
250g of rolled oats
75g of desiccated coconut
100g of ready to eat apricots – chopped
25g of sultanas
125g mixed seeds (I used sunflower and pumpkin)
120g of unsalted nuts – chopped (I only used pistachios)
You could mix it up a bit with cranberries, cherries, blueberries, almonds…
Method:
○ Preheat the oven to 130°C/Gas mark 2
○ Grease a swiss roll tin well
1) Gently warm the condensed milk in a large pan
2) Add all the other ingredients in to the condensed milk and stir it really well until thoroughly combined
3) Spread the mixture evenly in to the tin – make sure you press it down
4) Bake for 45 minutes. Once it’s done, cut in to squares then leave in the tin to cool completely.
Hello ‘on the go’ breakfast!
