Hiya! So it’s almost Easter.. I always think Christmas time is my favourite time of the year but then comes Easter time and I realise that I love it nearly as much. The daffodils and the sunshine (when it decides to show up!)
I’ve always had a weakness for Rocky Road so with Creme Eggs it’s inevitable that I’ll give in. It’s a chocoholics dream plus it’s no bake so it can be ready really quick!
Ingredients:
♦ 12 mini Creme Eggs – quartered
♦ 1 bag of Mini Eggs
♦ 8-10 Digestives – crumbled (but not too small)
♦ 14 cherries – quartered
♦ 85g of mini marshmallows
♦ 400g of dark chocolate
♦ 200g of white chocolate
Method:
♦ Line approx 8×10 inch tin with tinfoil
1) Put the cut up Creme Eggs, the Mini Eggs, marshmallows, crumbled digestives and quartered cherries in to a bowl.
2) Melt the dark chocolate over a medium high heat either in the microwave or over a bowl of gently simmering water
3) Once the chocolate has melted, pour over the Creme Egg, marshmallowy mixture and stir thoroughly until all is coated well in chocolate.
4) Spoon in to the prepared tin and level it out
5) Melt the white chocolate over a medium high heat also. Once it’s melted, spoon it over the top of the Rocky Road filling in gaps and making it look awesome!
6) Pop in the fridge to set. Once it’s set, cut up in to whatever size pieces you like – mine ended up being MASSIVE (although I had no complaints, just not many pieces!). Enjoy!
