Happy New Year! I’m starting off the year with chocolate baking – I’m sure we’ve all had plenty over the holidays but let’s have just a little bit more. There are orange in these cupcakes so they are practically healthy! I used just my basic cupcake recipe which always works wonderfully. The recipe is as follows:

Ingredients:
6oz of butter
6oz of sugar
3 eggs
Zest of 1 orange
Juice of half an orange
6oz of self-raising flour (Although plain flour with 2 teaspoons of baking powder works too)
1oz of cocoa

Method:
• Preheat the oven to 180°C/Gas mark 4
• Line a 12 hole muffin tin with cupcake cases (can use a cupcake tray if you wish, you’ll get more but they’ll be a little bit smaller)
1) Cream the butter and sugar together until creamy
2) Add the eggs and beat in well
3) Add the orange zest and juice
4) Sieve in the flour and cocoa – mix slowly until fully combined
5) Spoon equal amounts of the mixture in to the prepared cases and bake for 20-25 minute. The sponge should bounce back a little when touched.

Decorate however you like – I made a chocolate butter-cream with a little orange juice and then added half a piece of chocolate orange on the top.
