Untitled-1loThese spiced cashews can be a gift (I know I’ve left it a little late for gift ideas) or just a treat for the table. They take less than 30 minutes from start to finish to make. I made some today and wrapped some in a little cellophane bag tied with ribbon and left a few on the plate – the ones I left are now all gone. My parents claim that they’re pretty good…!

All you need is:
200g packet of unsalted cashews
1 tablespoon of sunflower oil
1/2 teaspoon of cinnamon
1/2 teaspoon of mixed spice/all spice
1 1/2 tablespoon of honey

Method:
Preheat the oven to 140°C/fan 120°C/gas 1
1) Combine the oil and spices together in a bowl
2) Add the nuts and stir until they’re nicely covered
3) Spread them over a baking tray and drizzle some of the honey over them (save a little for later)
4) Bake for 10 minutes then drizzle over the rest of the honey and bake for a further 10 minutes
5) Leave to cool for a minute or two then transfer them on to a plate with baking paper. This will prevent the honey setting and the cashews getting stuck – if this does happen then you can re-heat them for just a minute and you’ll be able to move them a little easier.
6) Leave to cool completely.
