Untitled-1edit2It’s almost Christmas and I can not wait! The most wonderful time of the year – not only because there is yule logs and mince pies but that definitely helps! – I made this yule log for a party last night and it was so simple that it would make the perfect dessert or just a little Christmas treat!

The ingredients are:
3 good sized eggs
85g of sugar
85g of plain flour – less 2 tablespoons
2 1/2 tablespoons of cocoa
1/2 teaspoon of baking powder

Method:
• Preheat the oven to 200C/fan 180C/ Gas 6
• Grease and line a 23 x 32cm Swiss roll tin
1) Whisk the eggs and the sugar together for up to 10 minutes until it’s light, thick and creamy
2) Sieve in the flour, cocoa and baking powder, fold in to the egg mixture slowly
3) Pour the mix in to the prepared tin and spread gently to the edges
4) Bake for 10 minutes
5) Lay a sheet of baking paper on a work surface, when the cake is done tip in out on to the paper and roll from the longest edge with the paper inside. Leave to cool.

The filling:
300ml of double cream
1 teaspoon of vanilla

Method:
• Whisk the cream and the vanilla together until thick – but be careful not to over whisk it.

• For the icing I made a butter cream with about 3 good sized tablespoons of butter and 4-5 good shakes of icing sugar and 1 of cocoa powder – make sure you sieve the icing sugar and cocoa to prevent lumps!
– it’s easier to do it by taste so when you’re happy, that’s good!

To assemble:
1) unroll the cake and spread over the vanilla cream – right to the edges.
2) Re-roll and then cut off a thick diagonal and place it on the edge of the log
3) Cover the whole of the log with the butter cream
4) Use a fork to make log effects, add a couple of holly decorations if you like and then sprinkle over icing sugar to create a snowy scene and tadaaaaa!
