Some friends and I had a girlie picnic recently and one of my fabulous friends is gluten and dairy free and brownies work well when made gluten free so they seemed like the best thing to make and they tasted YUM!

Ingredients:
6oz of butter – can use dairy-free
12oz of sugar
3oz of cocoa
3 eggs
4 1/2oz of plain flour – can use gluten-free
3/4 teaspoon of baking powder
A pinch of salt
A handful of chopped pistachio nuts

Method:
• Pre-heat the oven to 180°C/170°C fan/Gas 4
• Grease a line a 20x15cm tin 4cm deep – or similar.
1) Melt the butter in a pan over a low to medium heat
2) Add the sugar and cocoa then take of heat
3) Then add the eggs 1 at a time and beat well
4) Sieve in the flour and baking powder
5) Stir in the chopped pistachios
6) Once all fully combined pour the mixture in to the prepared tin and bake in the oven for 25-35 minutes.

• If you want them with slightly less cocoa you can substitute 1oz of the cocoa with ground almonds
• If you’re making them for someone with a nut allergy you can use chocolate chips instead of nuts
• They look extra pretty if dusted with a little icing sugar but beware because in my experience, icing sugar goes everywhere but that may just be me..!
