So these cookies are a little bit healthy because of the strawberries….! I made them this morning ready for lunch with my lovely sister and a very good friend, they were a hit!! Ani warmed hers slightly which she claims was delicious. I’m pretty happy with the way they turned out considering I was still half asleep whilst I was making them!

You will need:
• 250g of butter
• 100g of sugar
• 200g of soft light brown sugar
• 2 eggs
• 400g plain flour
• A pinch of salt
• 1/4 teaspoon of baking powder
• 100g of white chocolate – chopped in to chunks
• 5 good-sized strawberries chopped in to small pieces (

• If you use fresh strawberries you’ll have to eat the cookies within a couple of days but you could use dried strawberries if you wanted them to keep longer.

Method: Pre-heat the oven to 170°C/160°C fan/Gas 3
Makes 18
1) Put the butter and sugars in to a mixing bowl and mix until it’s light and creamy, add the eggs one at a time and mix again.
2) Sieve the flour, salt and baking powder in to the mixture and stir to combine.
3) Stir in the chocolate and then the strawberries – slowly.
4) Use a dessert spoon to spoon good sized heaps on the lightly greased baking trays. Bake for 18-20 minutes until golden.

• You could also dust them with icing sugar if you’d like for extra effect.
