This recipe comes from my great Grandmother and it’s an absolute gem, it works perfectly every time and it’s really amazing. I hope you’ll try it and love it as much as I do. This is the Lemon Curd that I used in the Lemon Cheesecake recipe that I put up recently, it’s a treat.
You need:
• 1lb of sugar
• 4oz of butter
• 3 good sized lemons
• 3 large eggs
Method:
1. Heat the sugar, butter and lemon juice together until all the sugar is dissolved.
2. Beat the eggs in a mixing bowl then pour the sugar mixture SLOWLY, a little at a time, on to the beaten eggs – stirring ALL the time.
3. Return all the mixture to the pan and bring to the boil slowly and continually stirring. Once it’s just boiling, take off the heat and leave to cool for 5 minutes before pouring in to sterilized jars.
