
A perfect summer drink – one of my all time favourites and it’s so simple too.
All you need:
♥ 1 litre of boiling water
♥ 1kg on granulated sugar
♥ The juice of 2 large lemons
♥ The zest of 2 large lemons
♥ 15 Elderflower heads (stalks removed) – you could put 2 smaller heads together to equal 1 head if you need to.
How to:
1) Put the sugar in to a large pan/ clean bucket or basin
2) Pour the boiling water over the sugar and stir until the sugar is dissolved – it will turn in to a syrup
3) Pour in the lemon juice and add the zest
4) Then add the elderflower heads and give it all a good stir
5) Cover and leave for 1-2 days, stirring each morning and evening. I started mine on Sunday at around 5pm and I put it in bottles this morning (Tuesday) at about 10am and it’s delicious!
6) Before putting the cordial in to sterilised bottles, strain through muslin. (It can be bought in fabric shops if you don’t have any)
♥ Make sure you dilute a little of the cordial with water.
