Apricot and Pumpkin Seed Flapjack

The best thing to make if you want something pretty quick and very easy that tastes amazing – it also gives the kitchen a sweet aroma, it’s worth baking these just for that.
Plus it’s got apricots and pumpkin seeds so it’s semi healthy…..!

Ingredients:
♦ 6oz of butter
♦ 4 1/2oz of sugar
♦ 3 tablespoons of golden syrup
♦ 12oz of oats
♦ 6 apricots – chopped in to small pieces
♦ A handful of pumpkin seeds

Method:
Preheat the oven to 150°C/Gas 2
1) Melt the butter, sugar and syrup together in a saucepan until melted. Take off the heat. ( I always heat the spoon in some hot water before spooning out the golden syrup and it slides off the spoon much better and you don’t loose any of the syrupy loveliness!)
2) Add the oats and mix together thoroughly.
3) Then add the chopped apricots and pumpkin seeds – mix.
4) Tip the mixture into a lined baking tin and bake for 20-30 minutes until golden brown.
5) Cut in to squares of any shape whilst it’s warm in the tin. Tip out when it’s cooled.
