
Hi lovelies, this is a NO bake recipe which is pretty awesome. They take half an hour to make (ish..) and the recipe makes about 21 – you can make them bigger or smaller if you wish and then the quantity will vary. I’ve made Rocky Road before but I wanted to try and make them like a cupcake just without the cake. The idea, I’m sure it’s been done before but it was my fabulous sister Beth who put the idea in to my head so here we go!
The Ingredients:
♥ 115g of biscuits – crushed. I used choc chip but digestives would work too.
♥ 115g of malteasers – slightly crushed
♥ 115g of mini marshmallows
♥ 12 – 14 cherries cut in to quarters
♥ 100g of raisins or sultanas
♥ 250g of dark chocolate – melted
♥ 25g of butter
♥ 2 dessert spoons of golden syrup
♥ 100g of white chocolate for the drizzle – melted
The Method:
1) Crush the biscuits and put in to a large bowl. Then slightly crush the malteasers, add to the crushed biscuits
2) Add the marshmallows
3) Chop the cherries, add those to the bowl along with the raisins/sultanas.
4) Melt the chocolate, butter and golden syrup together either in the microwave – about 2 minutes, stirring half way through or you can place a heatproof bowl over a pan of gently simmering water ( make sure the bowl doesn’t touch the water).
5) Add the melted chocolate to the biscuit mixture and mix thoroughly to combine it all together and to get the chocolate to coat everything.
6) Working pretty quick, use a tablespoon to spoon the mixture in to the cupcakes cases.
7) Melt the white chocolate using either of the methods from earlier. Then drizzle over the top of each mountain of chocolate heaven. Pop them in the fridge to set.
Tada! You just made a winner for any chocolate lover.
○ Probably best kept refrigerated 🙂
○ At Christmas time you could add cranberries instead or along side the cherries and icing sugar to dust. Also if you’re a nutty person you could add nuts.
