
I’ve had a fudge making morning! I love making fudge, I’m always pleasantly surprised when such simple ingredients can create something so delicious!
Ingredients:
♥ 500g of granulated sugar
♥ 150g of unsalted butter
♥ 150ml of milk
♥ 3 teaspoons of honey
♥ 1.5 teaspoons of vanilla extract
Method:
1) Put all the ingredients in to a heavy based pan and heat gently until the sugar has dissolved completely – it takes 15 – 20 minutes ish. Stir occasionally.
2) Then bring to the boil and let it bubble until it reaches 116°C on a sugar thermometer or the soft ball drop stage ( drop a teaspoon of the syrup into a bowl of cold water – it should come together in a ball between your fingers).
3) Immediately dip the bottom of the pan into a bowl of cold water. Put the pan on a cold surface and leave for 5 minutes.
4) Beat the fudge with an electric hand whisk until very thick – Mine took about 5 minutes.
5) Pour in to a tin lined with cling film ( make sure it over laps the edges).
6) Cut in to squares when it’s completely cold – you can put in the fridge if you want it to be ready sooner.

♥ You can also add other ingredients, if you’d like to add chocolate you need to add 150g of your chosen chocolate to the pan. Chopped stem ginger can be added just before you pour in a tin, same goes for cranberries or raisins – mix it up!
