So I’ve made these twice – both times equally delicious – but I always seem to make them bigger than when Mum makes them. This mixture should make 24 cakes but I only ever seem to make 16… !

Ingredients:
•1lb (16oz) of self raising flour
•1/2 teaspoon of mixed spice
•8oz of butter
•6oz of sugar
•6oz of mixed fruit
•2 eggs
•A little milk

Method:
•Preheat the oven to 200°C/180°C fan/Gas mark 6

1) Sieve the flour and mixed spice in to a mixing bowl, add the butter and rub in to the flour until the mixture resembles bread crumbs
2) Stir in the sugar and mixed fruit
3) Beat in the eggs one at a time and then add a little milk until the mixture becomes a soft dough – add a small amount of milk at a time as you don’t want the mixture to be too wet
4) Using a dessert spoon – put spoonfuls of the mixture on to greased baking trays and bake for about 15 minutes until golden.
