
This is one of my ALL time favourites! I just enjoyed a slice with a good cup of tea. I hope if you try to make it that it turns out wonderfully for you.
Ingredients:
4oz softened butter
4oz sugar
4oz self raising flour
1 teaspoon of baking powder
Juice and zest of 1 lemon – I used the juice of 2 when I made this one, that works too.
2 eggs
Method:
1) Grease and line a small loaf tin. Preheat the oven to 150°C/325°F/Gas mark 3.
2) Cream the butter and sugar together. Add the eggs – beat well.
3) Add the lemon juice and zest.
4) sift in the flour and the baking powder, mix to combine together.
5) pour in to prepared loaf tin and bake for 35 – 45 minutes.
The drizzle is very simple. I use the juice of half a lemon, a teeeny bit of water ( a couple of drops) and some icing sugar – I used about 5 teaspoons this time around but it does vary – mix it all together until you have a consistency that it good for drizzling and spoon over you cake whilst it’s still warm.
