
The making of this was a journey…! I loved the idea and I couldn’t wait to try it out except I made an error in not putting the correct amount of oil in to the mix soo after we’d used a bread knife to cut it at lunch time ( that shouldn’t be the case…) we wondered where I’d gone wrong and then I realised I’d missed out the majority of the oil so I re-melted the mix and added the oil I’d missed and tadaaaaa. You can actually spread it now – amazing. The flavour is so yummy.
The ingredients are:
150g hazelnuts
240g milk chocolate
100g dark chocolate
100ml vegetable oil – I used sunflower oil and it worked just fine.
3 tablespoons of icing sugar
1 tablespoon of cocoa powder
1 teaspoon of vanilla essence
Method:
1) Heat the oven to 170°C/150°C fan/Gas 3. Put the hazelnuts on to a lined baking tray. cook for 5-6 minutes until golden. Rub the skins off if you need to. Leave to cool.
2) Melt the chocolate, either in a heatproof bowl over a pan of gently simmering water or in the microwave. Once melted set aside to cool slightly.
3) Put the hazelnuts in a food processor and whizz until they’re finely ground and oily. Add the 100ml of oil and whizz again until smooth. Add the icing sugar, cocoa and vanilla, mix to combine.
4) I didn’t use to food processor after that, I poured the hazelnut mix in to the bowl of chocolate and used a electric hand whisk to mix it all together thoroughly.
5) Pour in to a jar. I tried it on a piece of toast and it was delicious, I’m looking forward to having it with pancakes or on a cake…
